When we roast at Nosey Goat Coffee & Roastery, each batch tells a story, of altitude, humidity, and timing. Before the roast even begins, we measure the bean’s moisture level — that small number (10–12%) makes a world of difference. Too high, and the beans roast unevenly. Too low, and they burn too fast.
Then comes my favorite moment: the first crack.
It’s not just a sound — it’s the heartbeat of the roast. That tiny pop means the coffee is transforming — sugars caramelizing, aromas blooming, and complexity being born.
